Tomato biryani is a one pot recipe which is very easy to make and if we don't have any veggies in our home and want to have spicy biryani we can prefer this recipe.
This biryani is south Indian recipe because here I have added coconut milk, herbs and spices.
There are many version of making this biryani , I have made a very easiest version of tomato biryani. Here I have used pressure cooker if you want you can use thick bottom pot or pan with tight fitting lid. In this tomato biryani I have added coconut milk to make the rice very tasty and rich. If you don't want to add coconut milk you can skip it and use water instead of coconut milk. You can use vegetable stocks also.
Here I didn't added any veggies, if you want to add any veggies you can add green peas and carrot.

INGREDIENTS
- Coconut oil - 4tbspn
- Ghee -1tbsp
- Biryani leaf - 1
- Biryani masala powder - 1tbsp
- Onion Chopped - 1
- Ginger garlic paste - 1tsp
- Kasuri Methi - 1tbsp
- Tomato - 4
- Chili powder 1 tbsp.
- Turmeric powder - 1/4tsp
- Coriander powder - 1tbsp
- Salt
- Rice Basmati - 1cup
- Water - 1 cup
- Coconut milk - 1 cup
- Green chili - 1
- Coriander leaves few
INSTRUCTIONS
- First Soak the basmati rice for 1 hour
- Now take tomatoes and make smooth puree
- Heat pressure cooker
- Add coconut oil and ghee
- Now add bay leaf
- Then add biryani masala
- Saute well
- Now add Chopped Onion and saute
- Add Ginger garlic paste
- Sauté till raw smell goes.
- Now add kasuri methi and mix well
- After few mins add tomato puree
- Let puree cook until raw smell goes
- After few mins add chili powder, turmeric powder, coriander powder
- Mix well and keep the flame in medium
- Cook until it becomes thick like paste
- Add Salt
- Add soaked rice and mix gently
- Now add one cup water and one cup coconut milk
- Mix well
- Now add chopped coriander leaves
- Add Sliced green chili
- Now close the lid and pressure cook until 2whistle
- Open after pressure goes.
- Yummy and delicious tomato biryani ready.
- Serve with onion raitha and appalam

1) Coconut milk is optional. You can use water also.
2) Coconut oil is optional instead you add normal cooking oil
