Healthy Coconut Chewy Cookies/ Eggless Coconut Cookies
These coconut cookies is very tasty, crunchy out side and chewy inside..
They are fabulous, tasty , softy , chewy and also very easy to make.
These cookies is excellent snacks for kids. They sure love it.
These coconut cookies are eggless and if you don't have Maida , you can try wheat flour also.
Here the coconut cookies smells awesome. I love coconut flavor so I love this coconut cookies very much.
If you want you can add Choco chips also in this coconut cookies. Taste will be delicious.
In this recipe i have added desiccated coconut , if you don't have desiccated coconut you can add fresh coconut also. Taste will be excellent but you have to finish it within 3 to 4 days because fresh coconut will not be fresh for long days whereas you can store this coconut cookies if you add desiccated coconut. It will be fresh for 5 to 7 days. or you can store in fridge also.

Ingredients
Method
- Take a large mixing bowl
- Add butter (Butter should be in room temperature)
- Beat the butter nicely
- Now add powder sugar
- Now beat for 2mins until the mixture becomes like creamy stage.
- Now sieve maida, sugar, baking powder.
- Add it in that butter and sugar mixture.
- Add desiccated coconut and mix well.
- Now mix gently with a flat spatula.
- Avoid mixing hardly because muffin will be very hard.
- Use cut and fold method
- After mixing nicely add milk
- Now combine the flour with hand and make like a chapati dough.
- Cookie dough is ready now.
- Now take a ball size dough and flatten slightly.
- place it in baking plate with a space in-between.
- Keep it in refrigerator for15 to 20mins.
- Now preheat the oven for 180 degree Celsius
- Bake for 15mins to 18mins.
- Coconut cookie is ready
- Store the coconut cookies in a air tight container and enjoy.
NOTE
- If we refrigerate the cookie dough then our cookies won't spread while baking.
- The shape of the cookies will be like bakery style.
- You can skip desiccated coconut and add fresh coconut also.
- Cookie dough should not be very hard like puri dough.
- It should be like chapati dough.
- Milk should be in room temperature.
- If you don't have microwave you can bake his cookies in a hard kadai also.
- Place a kadai in a stove, add salt and heat it for 10mins.
- Place the cookie dough in a plate and bake for 15mins.
- kadai cookies ready to taste.
