 Mixed Vegetable Curry Recipe For Chapathi, Puri & Naan.




The mixed vegetable curry recipe is a very healthy and delicious recipe. Here I have added Curd, paneer and fresh malai which is rich in protein. I often prepare this recipe weekly once for my kids. 
It is a simple recipe that is very easy to prepare. Very time-consuming dish. This recipe will be very useful for those who are very new to cooking. 


This vegetable curry is also known as tandoori veg curry. The method of this dish is also very different. Here I didn't add onion so this recipe will be very useful for those who don't use onions on a particular day.









INGREDIENTS

  • Paneer - 200gm
  • Green peas - 1/4cup
  • Cauliflower - 1/4cup
  • Capsicum - 1/4cup
  • Beans - 1/4cup
  • Tomato _ 1/4cup
  • Thick curd-2tbsp
  • Fresh cream - 2tbsp
  • Ginger Garlic paste - 1tsp
  • Oil- 3tbsp
  • Bay leaf - 1
  • Pepper seed - 10
  • Cardomom - 2
  • Coriander leaves few
  • Kasuri methi - 1tsp
  • Cumin powder - 1tsp
  • Coriander powder - 1tsp
  • Chilli powder - 1tsp
  • Turmeric powder - 1/4tsp
  • salt to taste


Method

  1. Take a mixing bowl and add all vegetables one by one.
  2. Now add Cumin powder, coriander powder, chilli powder, turmeric powder, fresh curd and fresh cream. 
  3. combine well
  4. Now add ginger garlic paste and mix well
  5. Now we have to marinate this vegetable mixture for 10 to 15 mins.
  6. Keep it aside.
  7. Now heat the pressure cooker.
  8. Add oil and heat it.
  9. After the oil is heated add pepper, cardamom, and bay leaf.
  10. Then add marinated veggies and mix well
  11. Cook for few mins.
  12. Now add salt and coriander leaves.
  13. Mix well.
  14. Close the Cooker lid.
  15. Pressure cook until  1 whistle.
  16. Keep the flame high.
  17. Switch off the flame after the whistle comes.
  18. Serve with hot roti, chapati or puri.

            Marinate for 15mins

Heat the pressure cooker

Add Oil/ghee

Add Pepper,cardamom,bayleaf
Add marinated veggies


mix well
Add salt
Add coriander leaves


Close the lid and pressure cook until 1whistle 

After 1whistle 

    Serve hot with chapati or puri
