 BRINJAL RICE






Brinjal rice is a very healthy recipe
 It can be make from fresh rice or leftover rice. Both tastes good. 
This brinjal rice is also called  as vangi bath which is  famous in karanataka.
 Any kind of brinjal can be used for this recipe. 
This recipe will be very useful for all because it is  made from leftover rice. 



Ingredients 
1. Leftover rice - 1 &1/2cup
2. Brinjal - 6
3. Potato - 1
4. Oil- 4tbsp 
5. Salt - as required 
6. Turmeric powder- 1/4tsp
7. Sambar Powder - 1tbsp 


For Vangi Powder 
Coriander seeds - 4tbsp
Channa Dal - 2tbsp 
Dry red chilli - 5
Oil - 1tsp 

Method :
For Vangi masala powder:
Take a fry pan. Heat oil. Add Coriander seeds channa dal and red chilli. Fry until golden brown. Allow to cool and grind fine powder.

Vangi Masala Powder Ready


Take a fry pan,heat oil and add mustard seeds,cashew. Saute well.
Then add brinjal and potato(slice cut) 
Fry till veggies cooked.

After half cooked add turmeric powder,Salt  and sambar powder. Mix well and cook for few mins. When veggies are cooked well add vangi masala powder and combine well. 


Cook for few mins and add curry leaves and hing powder finally so that our brinjal rice will be very aroma. Now add boiled rice and mix well. Close and cook for 1min and swtich off the flame. 
Serve Hot with papad.
