Veg Kolhapuri Recipe
This Kolhapuri recipe is very delicious and tasty. Excellent combination with chapathi,naan, Fried reice and jeera rice. This recipe is a north Indian recipe which is very famous in resturant side. The way of making this curry recipe is very different. First We have to make homemade masala powder for this recipe which is really excellent in taste.
Ingredients
For Masala Powder
Cumin Seeds -1tbspn
Coriander Seeds - 1tbspn
Poppy seeds - 1tbsp
White sesame seed - 1tbsp
fenugreek - 1/4tsp
pepper seeds - 1/4tsp
cloves - 6
Red dry chilli - 6
Grated coconut - 2tbsp
Gravy
Onion - 2
Tomato - 2
ginger 2
garlic pod - 4
Briyani leaf -1
cardamom -2
cinnamon - 2
turmeric powder - 1/4tsp
Kashmiri chilli powder - 1tbsp
Red chilli powder - 1tbsp
oil - 3tbsp
water - 1cup
Vegetables
Cauliflower
beans
green peas [ half cup]
capsicum
carrot
Method :
Take a fry pan and add cumin seeds, coriander seeds, poppy seeds, white sesame seeds, Fenugreek, Dry red chilli, grated coconut, pepper seeds, cloves .. Fry all these items and grind it. Keep it aside.
Now shallow fry All vegetables( cauliflower,beans,green peas,capsicum,carrot)

Now in the same fry pan add garlic, ginger, onion, tomato and cashew nuts, saute all items and add half cup of water and boil it. After boiling allows to cool and grind smooth paste.
After grinding keep it aside.
Heat Kadai and add oil and butter, after heating add the ground paste, biryani leaf, cinnamon, cardamom. saute while. add turmeric powder, Kashmiri chilli powder, red chilli powder. mix well.
After mixing well add the masala powder and salt 3tbsp and saute it.
Then add 1cup water and cook for 2mins
Now add all fried vegetables and cook for 2mins . After two mins add butter and switch off the flame.
Serve hot with chapati or naan.
