Hotel Style  Arachuvitta Sambar Recipe


This Arachuvitta sambar (Ground Sambar) is very delicious and also very easy to make. Its aroma is really awesome. This Sambar goes well with white rice and also with idli, dosa.

This sambar also goes well with chapati too. The taste will be very different. Try once and let me know. 

Sambar is very famous in south India. Even on the north side, some people love sambar, they love to have sambar with idli and dosa. In our family we use to cook sambar twice a week. especially on Tuesday and Friday., Sambar is a recipe that we can use as a side dish for idli, dosa, white rice, khichdi, puri and chapati too.

There are many kinds of sambar. The most tempted sambar is the Mango sambar and mixed veg sambar. The taste will be excellent and mouthwatering.

Actually, I use to do sambar with instant sambar powder but here I have shown you how to make Arachuvitta sambar ie ground sambar powder.. I have freshly roasted spices and made this sambar. 

Here I have used Drumstick and Brinjal. You can use any kind of Vegetables. The taste will be awesome. Freshly roasted spices make sambar very aromatic. 

 Ingredients 

Coconut Paste:
  •  Oil - 2tbsp 
  • Coriander seeds - 2tbsp 
  • Channa Dal - 1 & 1/4tsp
  • Fenugreek- 1/4tsp
  • Dry red chilli - 10
  • Grated coconut- 3tbsp 

For Dal
  • Toor dal - 1/4cup 
  • Castroil- 2drops
  • Water - 1cup
  • Garlic - 3

For Sambar: 
  • Oil - 1tbsp 
  • Mustard seeds - 1tsp 
  • Curry leaves - few
  • Onion -1
  • Tomato- 1
  • Drumstick - 1
  • Brinjal - 1
  • Tamarind - Gooseberry size
  • Coriander leaves handful
  • Green chilli - 1
  • Hing powder- 1tsp 
Salt as required 

Method: 

  1. Cook dal with water and garlic and also 2drops of Castroil.
  2. Pressure cook for 6 whistles. 
  3. Simmer the flame and cook. 
  4. Turn off the heat and let the steam go. 
  5. Open the cooker and mash well and set aside. 
  6. Heat a pan and add oil. 
  7. Let oil gets heat then add Coriander seeds, channa dal, red chilli, Fenugreek and grated coconut. 
  8. Fry until golden brown and allow to cool.
  9.  After cool down grind into a smooth paste. Keep aside
  10. Heat Kadai and Add oil and mustard seed and curry leaves.. saute for a min.
  11. Add onion and tomato and mix well. Cook for few mins.
  12. Add Drumstick and brinjal and toss well. 
  13. Add water and let veggies cook well. 
  14. Add tamarind water and cook for 3mins. 
  15. Add coconut paste and cook for 1min. 
  16. Add cooked dal, green chilli and coriander leaves and cook for a while. 
  17. Finally, add hing powder and switch off the flame. 
  18. Serve hot with white rice and papad.

Pour Castroil 

Pressure cook 6 whistles


Mash it nicely 


Add Coriander seeds


Fry until brown
Fry channa dal

Fry Fenugreek 

Fry red chilli


Until golden brown

Add fresh grated coconut and grind it smoothly.. keep it aside


Heat oil in a kadai

Add mustard seeds

Add curry leaves 

Add onion chopped

Add Tomato and saute well



Add drumsticks

Add brinjals 

Mix well


Pour water


Add turmeric powder 


Add tamarind water 

         veggies cooked well


Then add ground coconut paste

cook for few mins

Salt 

Cooked dal 


Cook for 2mins


Add green chilli sliced


Add Coriander leaves 


Add hing powder finally 


 Arachuvitta Sambar ready 


Note: 
1. Mash the dal when it is hot then you can do it easily.
2. You add any kind of Vegetables... 
3. Coconut oil gives nice aroma.
